Yet all ponies seem to be able to manipulate things with their hooves, which seems to imply they all have some sort of magical fingers at hoof.

Anne is capable of elemental manipulation in the areas of technology. In other words she can regenerate broken wires which along with mental projection along those wires, is her speciality. She can also fix broken bits of machinery, reshaping and "welding" as needed. If she REALLY REALLY has to, she can do a little repair work to flesh, though that is on par with Littlepip levitating herself - something that is extremely difficult and exhausting. Her skill does NOT extend to tracing the fine control circuits of cybernetics or pipbucks etc. That was her mother's area.

In my headcanon, all ponies have some sort of tactile telekinesis with their hooves; when they touch things, they can chose to manipulate the object with great dexterity. If not, they would never have managed to create a civilisation in the first place xD

And how would they play musical instruments? All the same, it seems to be something they don't think about. There's a Derpy/Doctor Whooves story where he's just turned into a pony and using his mouth to do things, and Derpy is saying "Just pick it up" like there is nothing to it.

In my headcanon, other types of ponies wear enchanted horseshoes that have a telekinesis spell placed on them, similar to how a water talisman has a spell placed on it. Normally its a pretty weak enchantment though, so heavy lifting still is done by gripping by the mouth. (Unless its harmonizing with a special talent, in which case the grip and control might be better)

In my head canon Earth Ponies are good at balancing. (either balancing things on one hoof, or balancing on their back legs to lift thigs up with both) but have no real ability to move things with their hooves and have to rely on their mouths for the most part.

I like to make things difficult for me earth pony.

I agree there. Ghouls in all forms still count as whatever they were before they died.
Not that I'd ever tell Puppy that she's dead. I'd have to be heartless to do so xD

My main character is a unicorn simply because being able to carry on a decent conversation while still doing things like shoot with little difficulty is a very nice thing to do, from a dialogue/story perspective.
